Abstract
Ecuador is a producer of cane for the sugar industry and for other uses, of which a percentage is used in the panela agro-industry, where more traditional than industrial activities prevail. The objective of the work was to determine the quality of the hydrolyzed honey from previous studies of natural clarification of the cane juice using natural mucilage. The species Abutilon insigne planch was used among the 14 plant species analyzed, under controlled conditions. The extraction of the mucilage from the plant was carried out mechanically at concentrations of 70 and 100 grams of plant / liter of water. The 4 and 6% mucilaginous solution was incorporated in two fractions of 50 and 50%, applied the first portion at 50 ° C and the second at 90 ° C and at 70 and 90 ° C espectively. An experimental designed was used 23 for the clarification and 32 for the sensory analysis, that has been evaluated using the statistical software statgraphics. Its effect on the clarification of the juice was determined by the turbidity response variable. The physical-chemical and microbiological analyzes proved that the honey manufacturing and nutritional quality was conclusive to opt for immediate executive actions in the sector.
